Chef Heidi’s short rib ragu is the ultimate cold-weather comfort food, with tender, slow-cooked short ribs in a rich, flavour-packed sauce. After browning bone-in or boneless short ribs, sauté onion, carrot, fennel, garlic, herbs, and anchovy in the same pot to build a deep, savoury base. Add tomato paste, red wine, tomatoes, and seasoning, then let everything slow-cook with the meat for 2-3 hours in the oven. Once tender, puree the sauce, shred the meat, and serve over pasta or creamy polenta for a cozy, make-ahead meal that freezes well.
