Here’s the 6th installment in the Liquor Plus Cocktail Series presented by Brian Chapman of My Teacher Drinks fame!

For the Santa’s Little Helper Cocktail you’ll need:
- 60 ml Wayward Distillery’s Raspberry Gin Liqueur
- 15 ml Honey/Thyme Syrup (see below)
- 15 ml fresh lemon juice
- 15 ml cranberry juice
- 120 ml Fever Tree Ginger Beer
Combine first three ingredients in a cocktail shaker with ice and shake for approx 10-12 seconds. Double strain into Collins glass filled with ice and top with ginger beer. Garnish with a lime wheel and thyme sprig.
Honey/Thyme Syrup
- 250 g. honey
- 250 ml hot water
- 5-6 thyme sprigs
Heat honey and water in a pot on the stove until simmering, add thyme and allow to simmer on low heat for five minutes. Strain into mason jar and keep in fridge for up to two weeks.
